About Notti Pizza, Torrens Park
Notti Pizza is a neighbourhood pizzeria on Springbank Road, run by Jamie and Emily Laing, who live locally in Torrens Park.
Jamie has spent the last 20 years in kitchens across Adelaide, learning his craft at Magill Estate, Olivetti, Dolly, Sho Sho and Maximilian's — the Adelaide Hills restaurant where they met. From fine dining to busy neighbourhood favourites, he has cooked at every level, and now applies it to a local pizza shop.
For Jamie and Emily, quality has never been about complexity — it's about getting your hands on the best ingredients.
The dough
Slow-fermented, hand-crafted
That care starts with the flour: Australian-grown, chemical-free, and chosen specifically for its high protein content. From there, it becomes a slow-fermented sourdough, hand-crafted the way it should be, and topped with the best seasonal produce we can get our hands on.
We put as much thought into what happens after the bake as into the dough itself — sauces, oils and garnishes added the moment a pizza leaves the oven, to bring freshness, tang and a touch of sweetness to every slice.

Take-home meals & pantry
Alongside the pizzas we make take-home family meals — lasagnes, pasta sauces and soups, cooked fresh and ready to heat at home.
Our pantry stocks dried pasta, tinned fish, chocolate, hot honey and olive oil, which you can add to a pickup order or buy in store.
